type='text'>ヨーグルトの乳酸菌を使う。</title><content type='html'>&lt;a href="https://www.ajibana.com/column/02/04.php"&gt;ここ&lt;/a&gt;より&lt;br /&gt;&lt;br /&gt;&lt;i&gt;例えば“生イースト”には、1g中に100～150億個ものイーストが生きています。&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;一方、ソフールの表面にはパッケージあたり（100ml)10億としか書かれていない。おそらくパンの発酵で使うにはヨーグルトのままでは菌数が少なすぎるのだ。1000倍くらい違う。なので、一部を取り出して水で倍以上に割り、湯煎して培養してみることにした。ちなみに生イーストよりもドライイーストのほうがはるかに密度が高い。 共発酵では酵母乳酸菌の比は10対1だといわれているので、それなりに増やしてあげないといけない。&lt;br /&gt;&lt;br /&gt;牛乳として考えたら、ソフールは、殺菌されたものにちかいなぁ。 &lt;br /&gt;&lt;br /&gt;&lt;i&gt;製品では１ミリリットル中に５万個というのが基準値ですが、原&lt;br /&gt;乳段階では数百万個、というものもあります。ＵＨＴ殺菌ならば、&lt;br /&gt;そんな牛乳でも、何とかなるのです。&lt;/i&gt;&lt;br /&gt;&lt;a href="http://food.kenji.ne.jp/review/review3.html"&gt;出典&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;表面にはL・カゼイとしかかかれてないけど、ラクトバチルス・カゼイだね。&lt;a　href="http://www.nyusankin.or.jp/scientific/moriji_3.html"&gt;ここ&lt;/a&gt;をみると。&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;i&gt;また、この乳酸菌の乳中での最高菌数は約20億／mlとなっていますが、他の乳酸菌でも牛乳中の最高菌数は1mlあたり数億ないし数十億程度で、さらに培養を続けると、図3には描いてありませんが、死滅期に入って生菌数は減少して行きます。&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;なるほど。ずいぶんスカスカだな、ソフールは。 type='text'>ためしてみた。</title><content type='html'>&lt;a href="http://www.cuoca.com/contents/recipe1/2009/09/post-76.html"&gt;マニアックなレシピ&lt;/a&gt;を試してみた。&lt;br /&gt;どうやらこねすぎの模様・・・。中が詰まりすぎた。&lt;br /&gt;また、表面になった生地が若干硬かったようで、爆発してしまった。ホイロの時間を長くしてみるか。&lt;br /&gt;皮に水を塗ってから焼いたので、パリッとなかなかな仕上がり。味も良かった。 &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; /&gt;左から自作、AEON、カイザー。自作はAEONに近い。AEONは砂糖がかなり入っているらしく、若干甘口、背が自作より低いにもかかわらず、トーストしたら焦げた。皮の感じから、カイザーっぽくするには皮に水分をつけるべきのようだ。もっと細く成形する必要があるだろう。カイザーは特殊な酵母を使っているようなので、あの酸味はそう簡単にまねられそうにない。&lt;br /&gt;&lt;br type='text'>専用粉は偉大</title><content type='html'>簡単にそれっぽい皮になる。仕上がりは水分が多すぎてイマイチ。&lt;br /&gt;&lt;br /&gt;- 粉600g&lt;br /&gt;- 水420g&lt;br /&gt;- イースト2g&lt;br /&gt;- 塩4g&lt;br /&gt;- 砂糖8g&lt;br /&gt;&lt;br /&gt;一晩かけてゆっくり発酵。&lt;br /&gt;&lt;br /&gt;次回は水は400gジャストで行こう。また先に３０分水和させる方向で。（粉が酵素入り） &lt;br /&gt;前回220度で焼いて表面が焼けすぎだったので200度にしたが、今度は焼きが足りない。&lt;br /&gt;20分では中が湿っぽかった。 &lt;br /&gt;材料：&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;薄力粉100g&lt;/li&gt;&lt;br /&gt;&lt;li&gt;強力粉100g&lt;/li&gt;&lt;br /&gt;&lt;li&gt;砂糖40g&lt;/li&gt;&lt;br /&gt;&lt;li&gt;ベーキングパウダー8g&lt;/li&gt;&lt;br /&gt;&lt;li&gt;牛乳：適当。多分80gくらい？、硬さを見ながら入れます。&lt;/li&gt;&lt;br /&gt;&lt;/ul&gt;&lt;br /&gt;手順：&lt;br /&gt;&lt;ol&gt;&lt;br /&gt;&lt;li&gt;粉を混ぜる。&lt;/li&gt;&lt;br /&gt;&lt;li&gt;牛乳を入れて、適当な硬さにする。引っ張ったときの模様が、市販のスコーンと同じ雰囲気になる硬さに調整。牛乳を入れすぎたら強力粉を少し足す。&lt;/li&gt;&lt;br /&gt;&lt;li&gt;20分焼く&lt;/li&gt;&lt;br /&gt;&lt;/ol&gt;&lt;br /&gt;非常にあっさりしているのでバターが必須だと思います。&lt;div
